摘要
对我国东北、华北、东南 3地区的啤酒厂空气中的微生物进行了研究 ,并对其中的野生酵母、醋酸菌、乳酸菌和发酵单胞菌等啤酒有害菌作了分类鉴定。同时初步建立了采气口采气模型 。
The atmosphere environment of various areas which lie in the northeast, north and east of China had been investigated The results showed there were obviously difference of bacteria species and quantities in those regions Furthermost the most common beer spoiled bacteria were identified as wild yeast, Lactobacillus, Acetobacter and Zymomonas; meanwhile, the model of bacteria numbers in air had been listed, and had set up the inlet patternization for air system in brewing industries.
