摘要
利用氨基酸分析仪分析驼血多肽,计算驼血多肽中各氨基酸的含量。通过必需氨基酸评分(AAS)、化学评分(CS)和支链氨基酸(BCAA)含量评价驼血多肽的营养价值及生物活性。结果表明,驼血多肽总氨基酸含量达到88.25%,其中必需氨基酸含量为44.82%,必需氨基酸/总氨基酸(E/T)为50.79%,必需氨基酸/非必需氨基酸(E/N)为103.20%;AAS和CS值均较高,第一限制性氨基酸为异亮氨酸,所有氨基酸含量都高于WHO/FAO/UNU推荐值,均可满足人体要求。驼血多肽中的BCAA含量较高,可作为生物活性肽开发利用。
Polypeptides from camel blood were analyzed by amino acid analyzer, and the content of each amino acid in the polypeptides was calculated. The nutritional value and biological activity of the polypeptides were evaluated based on amino acid score (AAS), chemical score (CS) and the content of branched chain amino acid (BCAA). The results showed that the total amino acid content of the polypeptides was up to 88.25 %, of which the essential amino acid content was 44.82%, the ratio of essential amino acid to total amino acid (E/T) was 50.79% and the ratio of essential amino acid to non-essential amino acid (E/N) was 103.20%. The values of AAS and CS were high; the first limiting amino acid was isoleucine; the content of all amino acids was higher than the recommended values of WHO/ FAO/UNU, which could meet the requirements of the body. The content of BCAA in the polypeptides was high, which could be exploited as one of bioactive peptides.
