摘要
采用双螺杆挤出技术对黑加仑果渣膳食纤维进行改性处理,通过单因素试验分析了水分添加量、物料粒度、挤出温度、螺杆转速四个因素对可溶性膳食纤维含量的影响,并采用正交试验对改性工艺进行优化。最终确定最佳工艺参数为:水分添加量为40%,物料粒度为80目,挤出温度为140℃,螺杆转速为160r/min。在此条件下,可溶性膳食纤维含量达24.87%,且各因素对可溶性膳食纤维含量的影响程度大小依次为水分添加量>挤出温度>物料粒度>螺杆转速。
