自贡市食品污染的调查与对策研究

Investigation and countermeasure study on food contamination in Zigong

目的对2009—2015年自贡市食品污染状况调查,为预防控制食品污染提供对策建议。方法按设定的调查方案,在自贡市辖区内确定6个调查点,参照国家及其他有关标准进行抽样、检验和评价,对得出监测数据,按样品件数、项目数、项目检出率进行分类统计分析与描述。结果 2009—2015年共计抽样监测各类食品4 499件,合格4 066件,合格率90.4%;监测各类污染物项目30 890个,合格29 790个,项目合格率96.4%;各类监测项目检出9 569个,项目检出率为31.0%。乳(95.2%)、蛋类食品(96.9%)、食品生产加工环节(94.3%)样品合格率均高;餐饮食品污染物项目检出率(44.2%)高。结论自贡市的食品污染总体处于较低水平,今后应继续加强行政管理和技术管理措施,保证食品安全。

[Objective]To investigate the status of food contamination in Zigong from 2009-2015,provide suggestions for food contamination prevention and control. [Methods]According to the survey plan,6 survey sites in Zigong were confirmed. The samples were selected,detected and evaluated according to state and other relevant standards,and the monitoring data were classification statistical analyzed and described by sample number,item number and detection rate. [Results]A total of 4 499 food samples were monitored from 2009-2015,4 066 samples were qualified,and the qualified rate was 90.4%. A total of 30 890 pollutant items were monitored,29 790 items were qualified,and the qualified rate was 96.4%;9 569 items were detected,and the detection rate was 31.0%. The sample qualified rates of milk（95.2%）,eggs（96.9%） and food production and processing（94.3%） were higher,and pollutant item detection rate of restaurant food was higher（44.2%）.[Conclusion] The food contamination in Zigong was in low level as a whole, the administrative and technical management measures should be strengthened to ensure food safety.
