摘要
肉制品行业的食品安全状况是关系广大人民群众身体健康的切身问题,也是主管部门重点关注的民生问题。目前肉制品质量总体趋势是安全的,但是不排除有食品安全隐患和个别食品安全案例。就现状而言,主要存在的问题是生产过程的控制无法实现有效可控的可追溯性,从而无法排除食品安全隐患。针对肉制品可追溯的难点和解决思路进行分析和探讨,以供广大同行参考。
The food safety situation in the meat products industry was an important issue relating to the health of the masses,and also was a livelihood issue which was emphasisly focused by the competent department. At present,the overall trend of meat products quality was safe,but the hidden food safety dangers and the individual food safety cases were not excluded. According to the current situation,the main problem was that the control to production process could not achieve effective and controllable traceability,thus the hidden dangers of food safety could not be excluded. The difficulties of traceability in meat products and solving ideas were analyzed and discussed and it would offer a reference for largeness peers.
