摘要
红枣色素是从红枣枣皮中提取的一种天然色素,其色泽鲜艳、枣香浓郁、安全无毒,是一种理想的天然色素资源。随着社会的发展,人们的健康意识逐渐加强,而越来越多的合成色素被证明具有致癌性。系统地研究了红枣色素对了解该色素的理化性质、功能特性及提高该色素的加工性和商品性的重要意义。目前我国对红枣色素的研究多集中在提取方法和稳定性方面,在其他方面的研究尚有许多不足。文章围绕红枣色素的提取、纯化、稳定性、结构及抗氧化活性等方面,综述了近几年国内外红枣色素的研究进展,同时展望了该色素的研究方向及应用前景,旨在为更好地开发利用红枣色素提供参考。
The red pigment from jujube peel is an ideal natural colorant resource with bright color and rich flavor. It is safe and non-toxic. With the development of society, people's consciousness of health is gradually strengthening, but more and more synthetic pigments are proved to be carcinogenic. Therefore, it is necessary to make a systematic study on the jujube peel red pigment, in order to get further understanding about the physicochemical properties of this pigment and improve its processing quality and characteristics of commodity. At present, the research on red pigment of jujube peel in China is focused on the extraction methods and stability, and there are still many deficiencies in other aspects. In this paper, the extraction and purification methods, stability, structure and antioxidant activity of red pigment from jujube peel are summarized, and the prospects of application in food and medicine industries are predicted, which provide a reference for better development and utilization of this red pigment.
