摘要
长期以来,各字典和辞书往往将烧饼与胡饼等混为一物。笔者从文献出发,佐以实物印证,讨论了胡饼的来源及加工制作方法,并通过分别比较其与烧饼、馕等食物的命名及制作工艺的异同后认为:胡饼即今天的馕;烧饼是晚于胡饼出现的一种外来面食。胡饼与馕的主要区别在于制作面剂时是否需加酥入味烘烤而成。
For a long time, "sesame cake" and " Hu cake" are often confused in dictionaries. Based upon the literature, the author discusses the origin and processing methods of "Hu cake"confirming with the entity. After comparing naming and baking progress of "Hu cake" with "sesame cake" and "Nang" respectively, the author concludes that "Hu cake" is today's "Nang"."Sesame cake" is exotic food emerged later than "Hu cake". The main difference between "Hu cake" and "nang" lies in that whether it is baked with the dough knead with butter in it.
