摘要
糖尿病是一种多病因的代谢性慢性疾病,谷物作为一种十分重要的食品原料和天然降血糖成分来源,食用得当有助于治疗和防治糖尿病。通过综述玉米、小麦、糙米、大豆和杂粮等谷物中降血糖功能活性成分的研究进展,详细介绍糖尿病的起因与谷物中降血糖功能成分的作用机制,以期为功能性谷物产品开发提供参考。
Diabetes is a chronic metabolic diseases. As an important food ingredient and natural hypoglycemic resource,cereal can help treat and control diabetes. In this paper, the research progress of studies on functional ingredients in cereals, as corn, wheat, rice, soybeans and coarse cereals are reviewed. Also, the cause of diabetes and research status of action mechanism on active ingredients are introduced. Thus,it will help researchers for new product development of grain functional food.
