摘要 贝类所含的毒素是由其摄食的微藻或菌类所产生的,这些毒素在贝类的体内积聚,通过被人类摄取而在人体中释放,使人体产生相应的食源中毒症状,严重威胁着人类健康。本文综述了贝类毒素及种类,并针对其近年来研发的小鼠生物测定法、高效液相色谱法、免疫学测定法、毛细电泳法、生物传感器法等检测方法进行了详细介绍,分析了各方法的原理、优缺点和适用范围等,最后对贝类毒素检测方法的未来发展趋势进行了展望。 Shellfish posioning toxins, mainly produced from microalgaes, were accumulated in shellfish body by feed- ing. Afterwards, they were released in human body by shellfish intake and caused corresponding food poisoning symp- toms. These shellfish posioning toxins potentially threaten human health. Therefore, in the review, shellfish posioning toxins and their species were summarized, their detection technologies were introduced in detail such as mouse bioas- say, HPLC, immunoassay, capillary electrophoresis, biosensor and so on, and all kinds of methods were also ana- lyzed. Finally, the future development trend of detection technologies of shellfish posioning toxins were prospected in the paper.
