豫北地区小麦籽粒矿质元素含量分析 被引量:10

摘要 为了解豫北地区小麦籽粒中矿物元素的含量,指导小麦区域种植,本研究采集了河南安阳、鹤壁、新乡等3个地市9个粮食主产县区的81份小麦籽粒样品,并分析其钙、铁、锌、硒、铜、镁、钠、钾、铬等9种元素含量。结果表明,豫北地区小麦籽粒中铜、铬元素含量均符合国家相关标准要求,锌元素存在少量超标样品,被测元素除镁、铬元素可满足一般人群的每日摄入量外,其余元素均需通过食用其他食品补充人体矿质元素营养需求。豫北地区矿质元素呈不均一分布,鹤壁市淇滨区周边小麦籽粒中锌含量较高,新乡市市区周边的硒含量较高,铁元素含量较高地区为安阳市内黄县、滑县东部,硒元素含量较低地区为安阳市滑县、新乡市延津县。本研究结果为保障豫北地区消费者营养元素均衡摄取提供了数据参考。 In order to know the content of mineral element in the wheat grains in northern Henan and guide wheat planting, this research analyzes the content of mineral element in the wheat samples of northern Henan in 2014. Result of the research can offer data reference for guaranteeing the balanced nutrient element absorption of the consumers in northern Henan. Total 81 portions of wheat grain coming from 9 main production counties, namely 3 main grain production cities( Anyang, Hebi and Xinxiang of Henan) , were collected. This research analyzes the content of 9 elements : calcium (Ca) , iron ( Fe ) , selenium ( Se ) , copper ( Cu ) , zinc ( Zn ) , magnesium (Mg) , sodium ( Na ) , potassium(K), chromium (Cr). The result indicates that the content of copper and chrome in the wheat grains of northern Henan accords with relevant national standard and requirement. The content of element zinc in few samples exceeds standard. Among the elements tested, magnesium and chrome can meet the daily demand of common people. As for other elements, people need to supplement them through eating other food. The mineral element in northern Henan is not well-proportioned. In the surrounding areas of Qibin District, Hebi City in the north of northern Henan, the content of element zinc in wheat grains is high. In the surrounding areas of Xinxiang City in northern Henan, the content of element selenium is high. The content of element iron is high in Neihuang County and eastern part of Hua County of Anyang City. The content of element selenium is low in Hua County of Anyang City and Yanjin County of Xinxiang City. Result of the research can offer data reference for guaranteeing the balanced nutrient element absorption of the consumers in northern Henan.
