摘要 古井浓香型酒的生产用曲中含有丰富的微生物,通过Biolog-ECO技术,根据不同时期培养的古井大曲微生物的生长特性,采用纯培养法对桃花"春曲"、"伏曲"、"菊花曲"、"冬季曲"中的微生物进行全面的筛选、分离、鉴定,经Biolog鉴定的古井大曲微生物109株,其中细菌55株,酵母菌43株,霉菌11株。在已确认的细菌中,有24株细菌是第一次从大曲中分离得到的,表现出了古井贡酒大曲微生物资源的丰富多样性。 Gu Jing-flavour Liquor contains abundant microorganisms, according on the growth characteristics of microorganisms in daqu that it was made in Spring, summer, autumn and winter, respectively. Screening, isolation and identification of daqu microorganisms by pure culture and Biolog ECO method. The results showed that multiple strains of bacteria(55), yeast(43) and mold(11) were isolated and purified from various four Gu Jing-flavour daqu which showed Gu Jing daqu has a rich microbial resources, what's more, there were 24 strains of bacteria was first isolated from daqu.
