摘要
为加强对新疆南疆地区核桃油脂利用,选定较优的核桃油脂品种,以新疆阿克苏地区种植的11个品种核桃为对象,利用色谱技术对核桃油脂中脂肪酸及VE进行测定,采用欧氏距离、类平均法进行聚类分析。结果表明:阿浑2号、纸皮核桃的出油率较高,新巨丰,扎343核桃的油脂中不饱和脂肪酸含量较高,新温81号、新萃丰核桃的油脂中VE含量较高,通过聚类可将二巨丰、阿浑2号、新巨丰、新萃丰、扎71号、新乌417号、纸皮等7个品种聚为一类,说明此7个品种的不饱和脂肪酸、VE含量差异不大。综合考虑各成分,新巨丰核桃出油率较高,不饱和脂肪酸、单不饱和脂肪酸含量较高,α-生育酚、γ-生育酚含量较高,营养价值较好,是值得发展的营养型核桃品种。
In order to strengthen application of walnut oil and select preferred oil variety, 11 walnuts varieties were collected from Aksu region in Xinjiang as study materials. The HPLC and GC technique were used to determine the contents of fatty acid and VE on walnut oil, and the Euclidean distance and group - average method were used for cluster analysis. The results showed that "A Hun 2" ," Zhi Pi" walnut on oil yielding were higher than those of others, the contents of VE in "Xin Wen 81" and "Xin Cuifeng" were higher than other cuhivars, and "Er Jufeng", "A Hun 2", "Xin Jufeng", "Xin Cuifeng", "Zha 71 ","Xin Wu 417 ", "Zhi Pi" walnut species cluster together, indicating that difference between this seven varieties of unsaturated fatty acids and VE contents was insignificant. The analysis result showed that the "Xin Jufeng" has high oil yielding, and higher unsaturated fatty acid and monounsaturated fatty acid, and α and β totaxinis contents were higher, so it was worthy of expanding nutritional walnut resource.
