摘要 以韭菜为试验材料,在紫外分光光度计波长240 nm下测定吸光度,计算其CAT活性,研究不同因素对韭菜CAT活性的影响。结果表明,韭菜CAT最适温度为35℃,最适p H值为7.5,存放时间段为24 h之内,乙醇浓度为5%时韭菜CAT活性最大,并且韭菜叶的CAT活性高于韭菜茎。 The activity of CAT was measured by UV spectrophotometer at 240 nm, and the effects of different factors on CAT activity of Chinese chive were studied. The results showed that the optimum temperature of CAT was 35 ℃,the optimum pH value was 7.5, the storage time was 24 hrs,the CAT activity of leek was the highest when the concentration of ethanol was 5%, and the CAT activity of leek was higher than that of leek.
