摘要 质构分析仪是目前最常用的挤压食品质构分析方法,但是该方法存在工作量大、耗时、无法实现快速在线检测等局限。因此为克服质构仪检测的局限性,提出利用计算机视觉分析系统对挤压食品的质构特性进行分析。通过对几种常见的挤压食品进行认识和了解的学习后,将计算机视觉系统采集的食品样品图片数据和质构仪检测的质构特性进行对比度分析。建立相关线性关系得出计算机视觉分析系统能够有效对挤压食品质构特征进行分析,并确定了一种简单快捷的基于计算机视觉的挤压食品质构分析方法。 Quality and structure analyzer is the most commonly method for extrusion food quality and structure analysis. However, this method has its limitations such as big workload, timeconsuming, unable to realize rapid online detection and other limitations. To overcome the limitations of structure test , this paper proposes using computer vision analysis system for extrusion food quality and structure characteristics analysis. Through the extrusion of several common food for the study of knowledge and understanding , computer vision system was used to collect the image data and the quality and structure of food samples to test quality and structure characteristics of the contrast analysis. The established relevant linear relations could concludes the effectiveness of the computer vision analysis system for improving the analysis of quality and structure of extrusion food characteristics. This paper proposes a simple and fast extrusion food quality and structure analysis method based on computer vision.
