摘要
研究近红外光谱法快速测定含乳饮料中增稠剂的含量的技术方法。应用近红外光谱仪,以含增稠剂乳饮料为研究对象,通过NIR扫描和NIRCAL分析优化,获得了在单种增稠剂存在条件下具有较好预测效果的定量数学模型。同时研究也发现,在应用上述模型进行预测时应注意模型的适用基质以及浓度适用范围。应用NIR对含乳饮料中增稠剂的定量检测方法作为企业产品质量内控是可行的,而将此方法作为含乳饮料中增稠剂的定性和定量尚需进一步的试验研究。
The rapid determination of thichener concent in milk beverages by near infrared spectroscopy(NIR) method was studied.Milk drinks containing thickening agent was deteced through NIR scanning and NIRCAL optimization analysis and get a quantitative mathematical model had a better prediction effect under the condition of single type of thickening agent. At the same time, the study also found that attention should be paid to model applicable scope and substrate concentration. The application of NIR in quantitative detection method of thickening agent in the milk beverage product quality as enterprise internal control was feasible, But this approach as a thickening agent in milk beverages of qualitative and quantitative still needed the further experimental research.
