摘要
目的了解餐饮业开展明厨亮灶的实施情况以及社会效果。方法采用分层随机抽样的方法,在商丘市梁园区餐饮单位和学校食堂托幼机构抽取各20家进行"明厨亮灶开展情况调查";在全区的社区和学校随机发放200份调查问卷对明厨亮灶的主要形式、满意度、展示部位等问卷调查。结果商丘市梁园区大型餐饮单位学校食堂、幼儿园食堂透明厨房开展情况良好,中小餐饮单位开展率不高;群众对开展透明厨房工作满意度高,同时要求加大开展"软件"方面透明力度,比如餐饮企业采购的原材料的渠道、餐具消毒情况、人员管理及健康状况要求公开透明。结论开展示范店的作用,采取"先易后难、先点后面"的方式,以点带面,逐步推广;加大食品经营许可事前的服务性指导工作,通过发证、换证等时机,逐步完成餐饮单位的"明厨亮灶"建设;加大宣传力度,提高广大群众的参与意识,使餐饮服务单位的后厨成为消费者可视、可感、可知的"阳光厨房"。
Objective Respond positively to the national food safety system of social policy, understanding the restau- rant industry to carry out the situation of the implementation and social effect of the clean kitchen and stove. Methods Using stratified random sampling method to extract medium catering units and school canteens childcare facilities all 20 in the investigation about "bright kitchen stove" ;200 copies of questionnaires were send out, to investigate the sat- isfaction, display parts.Results Large catering units like school canteen, kindergartens canteens transparent kitchen have good condition the lauching rate of the small and medium-sized catering units isn' t high; High job satisfaction of the masses to carry out transparent kitchen, meanwhile calling for software" aspects of transparency efforts, for exam- ple, materials purchasing channel of catering enterprises, tableware disinfection conditions, personnel management and health, they require an open and transparent. Conclusions The role of demonstration store, take the "easy to dif- ficult, points behind the first" approach, and an area gradually extended; Increase the food service business license prior to guide our work, by the time of issuing and replacement the papers, catering units through the "clean kitchen and stove" construction; To enlarge the propaganda dynamics, increase the awareness of participation of the masses, consumers can see, can feel, can know the back kitchen of the catering services unit because "Sunny Kitchen".
