The Hakka proverb “ Having eaten dog meat in the summer solstice,you’ll not get tired when you are running up hills” reveals that the Hakka culture in the 8 old Hakka counties of West Fujian is based on the changes of four seasons,with the features of being coarse, wild,simple and varied. Coarse as the food is ,it wisely achieves the harmonious unity of life and health. The unique catering culture also reflects that the Hakka ancestors followed the law of nature, conformed to nature, and coexisted harmoniously with nature. Therefore,it is the model of the cultural heritage of the orthodox Central Plains.
