摘要
研究了固液比、提取时间、提取温度、提取次数对黑胡萝卜色素提取效果的影响,并建立了产品颜色控制标准。结果表明,固液比1∶6,提取时间90 min,提取温度50℃,提取次数3次为最优提取条件,此条件下黑胡萝卜色素的提取单位吸光值为20.3,提取次数影响最为显著、提取温度次之、提取时间影响最小;精制后制得的色素产品色价均大于90,建立了黑胡萝卜色素的颜色控制和批次管理标准,即L*、a*、b*值范围分别是75~79、30~35、24~27。
Factors affected the extraction process of black carrot pigment,such as solid liquid ratio,extraction time,extraction temperature and times,were investigated and the color control standard of product was set up. Results showed that the unit absorbance of black carrot pigment extraction process was 20. 3 under the optimal extraction conditions as follows,ratio of solid-liquid was 1 ∶6,extraction time was 90 min,extraction temperature was 50 ℃,extraction times was 3 times. The extraction times was the most significant effect on pigment extract,and the effected of extraction temperature was next,while extraction time was the least effect condition. The color value of product was greater than 90 after refining of natural pigment. The color control standard and batch management of black carrot pigment were established,namely,range of L*,a*,b*value were 75 ~ 79,30 ~ 35,24 ~ 27,respectively.
