摘要
为研究大豆主要品质指标与大豆机械力学特性的关系,探讨用于评价大豆机械性能的理化特性指标。以5种大豆为原料,分析了不同大豆品种的水分含量、籽粒大小、化学品质与大豆长轴、短轴挤压力学特性的相关性。结果表明:随着含水率的增加,大豆籽粒的破裂力均逐渐减小,压缩功则逐渐增大;长轴和短轴的挤压力学特性参数不同,短轴压缩时大豆的总体力学特性参数更大;籽粒的尺寸、形状与大豆的挤压力学特性关系密切,籽粒大小与大豆的挤压力学特性呈正相关;粗蛋白含量与大豆挤压力学特性呈正相关,粗脂肪含量与大豆挤压力学特性呈负相关。研究结果可为大豆储运、加工设备设计的优化以及大豆的品质评价提供一定的参考。
In order to study the relationship between the main quality indicators and mechanical properties of soybean, the physical and chemical properties of soybean mechanical properties were discussed. The rela- tionship between water content, grain size, chemical quality and mechanical properties of long axis and short axis of soybean were analyzed using 5 kinds of soybean. The results showed that:with increase of water content, rupture force of soybean seeds are gradually decreasing, compression power is increasing gradually; Mechanical properties of long axis and short axis has different extrusion parameters, short axis compression is greater than the long axis;The size and shape of soybean are closely related to the mechanical properties of soybean, the grain size was positively correlated with the mechanical properties of extruded; The crude protein content was positively correlated with the mechanical properties of soybean extrusion, and the oil content was negatively correlated. The research results can provide some reference for the optimization of soybean storage and transportation, processing equipment design and quality evaluation of soybean.
