摘要
黔南布依族是中国少数民族的重要组成部分之一,其食狗肉、糯食、食酸、豆腐、食酒文化和食"活血"、食熏习惯,成为黔南布依族饮食文化的标签。通过分析归纳狗肉文化的形式和特色,糯食文化的成因、制作方法和种类,豆腐文化产生的原因和种类,食酒文化的民俗特点等等,提出黔南布依族饮食文化需要保护和弘扬。
The Buyi ethnic groups in the south of Guizhou is the key parts of the ethnic minorities in China. Dog meat, glutinous foods, soured foods, bean curd, drinking culture," live blood" eating, smoked foods eating customs become the symbol of the Buyi ethnic catering culture. By analyzing and summarizing the forms and characteris- tics of dog meat ,the causes and production methods of glutinous food culture ,and the causes and category of bean curd, the article argues that the Buyi ethnic catering culture in the south of Guizhou should be protected and carried forward.
