摘要
蛹虫草作为一种食药用真菌,含有多种生物活性成分,已在我国大规模培养。发酵技术研究是探索蛹虫草开发利用的重要途径,近年来液体发酵技术的开发及其发酵产物的应用有了很大的进展。本文对蛹虫草的主要活性成分、液体发酵优化和蛹虫草液体发酵的应用进行综合阐述,并对研究中存在的一些问题进行展望。
Research on Cordyceps militaris as edible and medicinal fungi had some bioactive compound, and was cosmically cultured in China. Fermentation was a key to the utilization of Cordyceps militaris, the related researches had made a lot of progress in recent years, especially including exploitation of liquid fermentation and application of fermentation products. Studying the bioactive compound on Cordyceps military and the optimization of liquid cul- ture and application of liquid culture in Cordyceps militaris, and discussing some problems existing in the report.
