摘要
甘油是食品加工业中通常使用的甜味剂和保湿剂,常出现于运动食品和代乳品中。实验中常用高碘酸氧化法测定甘油的含量,但耗时较长。将测定步骤中硫代硫酸钠溶液滴定改良为分光光度法,通过建立数学关系式,可以间接求出甘油含量。研究发现:在波长560nm处有最大吸收,改良光度法测定甘油快速,其结果重现性好、准确度高。
Glycerol is usually used in the food processing industry in the use of sweeteners and moisturizing agents, often appearing in sports food and dairy products. Determination of glycerol used periodate oxidation, but the experi- ment is time-consuming. The determination step with sodium thiosulfate titration for improved spectrophotometric method, through the establishment of mathematical formula, calculate the indirect glycerol content. It is found that the maximum absorption at the wavelength of 560nm, modified rapid spectrophotometric determination of glycerol, the results of good reproducibility and high accuracy.
