摘要
从照料护理服务需求的角度出发,采用实地测绘、观察调查与访谈相结合的方法,重点对北京市3所社区型养老机构厨房区的功能空间构成与使用现状、设备现状、进货流线、送餐流线、收残及厨余垃圾运送流线等进行了调查分析。在此基础上,提出与社区型养老机构规模相适应的厨房区功能空间构成、功能流线组织及相关空间的设计建议。
Starting with the demands for caring service, this paper adopts the methods combining field survey, observation and interviews to investigate the functional layout, utilization, equipment conditions, supplementation circulation, food delivery circulation and waste discharge circulation of the kitchens in community-based institutions for the elderly in Beijing. On this basis, it advices on composition of functional space, organization of functional circulations and related spatial design of the kitchen area in an appropriate scale to the size of the institutions.
