冷藏期间猪肌肉中肌苷酸沉积规律研究 被引量:5

摘要 为研究瘦肉型猪种及其杂交猪肌肉中肌苷酸及其代谢物在4℃冷藏条件下的降解沉积变化,本试验选择引进瘦肉型猪种及其杂交商品猪,采用高效液相色谱技术测定其背最长肌肌苷酸及其代谢产物含量。结果表明,杜洛克猪、长白猪、大约克猪及其三元杂交猪背最长肌中肌苷酸、肌苷和次黄嘌呤的降解沉积规律一致。肌苷酸含量在冷藏第2 d达到最高值,比第1 d增加0.4%~15.32%,然后开始下降;冷藏至第4 d时,肌苷酸含量明显降低,比第2 d时降低23.81%~39.06%;冷藏至第5~6 d时,肌肉中肌苷酸含量持续下降,但降幅减缓,肌苷酸含量保持在1.0 mg/g左右。而肌肉中肌苷和次黄嘌呤含量则随冷藏时间延长呈增长趋势。 To investigate the degradation and sediment variation of IMP and its metabolites in lean pig and hybridization pig muscles under the refrigeration condition of 4℃,the HPLC method was employed to test the contents of IMP and its metabolites in longissimus dorsi of lean pigs and hybridization pigs. The results indicated that Duroc,Landrace,Yorkshire and DLY pigs shared the same degradation and sediment pattern on IMP,inosine and hypoxanthine. On the second day under 4℃,the content of IMP reached the highest value which increased by 0. 4% ~ 15. 32% compared with that on the first day,and then it started to fall off. On the fourth day under 4℃,the content of IMP significantly reduced by 23. 81% ~ 39. 06% than that on the second day. On the fifth and sixth day under 4℃,the content of IMP kept falling down slowly and maintained around1. 0 mg / g. While the contents of inosine and hypoxanthine showed an increasing tendency with the extension of cold storage time.
