摘要
要在激烈的竞争中胜出,餐饮企业必须改进经营策略,开发"当家菜"。文章针对餐饮企业在打造与经营"当家菜"中存在的问题,进行分析与研究,并提出打造与经营"当家菜"的方略,以供餐饮企业管理者与经营者思考和借鉴。
To survive the fierce competition, catering businesses have to improve their running strategies and develop their special dishes. This paper analyzes the problems in their process of developing special dishes be- fore suggesting corresponding strategies for catering business managers and runners.
