摘要
文章分析了传统教学模式下中餐烹饪教学存在的问题,并针对这些问题运用翻转课堂教学模式提出了相应的改进措施,以此呈现出翻转课堂教学模式下中餐烹饪教学的优势;因势利导,阐述了翻转课堂教学模式应用于"淮扬简餐"教学设计的具体实例,并反思了此教学设计在教学实施过程中的成功与不足;最后总结了翻转课堂理念下中餐烹饪教学所面临的挑战与发展趋势,以期为中餐烹饪教学提供借鉴与参考。
This paper analyzes the problems in traditional Chinese cuisine teaching, and proposes measures for improvement to tackle these problems from the perspective of flipped classroom teaching so as to explore its ad- vantages and application in the teaching design of Simple Huaiyang Dishes. The paper also reflects on its suc- cess and disadvantages in teaching practice, and summarizes the challenges and development trends of Chinese cuisine teaching, so as to provide reference for cuisine teaching.
