花卉是一种活性植物组织 ,采收后仍在不断发育变化。影响花卉采收后衰老、腐败的因素很多 ,其中温度是最主要的因素之一。花卉采收后由于呼吸加快 ,产生大量的附加热 ,即所谓田间热 ,田间热对花卉的贮藏和运输十分有害 ,必须迅速除去 ,使之达到规定要求的温度 ,即预冷。真空预冷是最有效的方法。花卉的品种繁多 ,各生理特性不同 ,生长环境各异 ,所以花卉的真空预冷保鲜技术十分复杂 。

The flowers and plants are active plant's tissues. After gathered, their growth and change have been continued. After gathered, the breath of flowers and plants is quikened, the heat attached to them must be removed quickly, and the temperature is suited to require, or precooling. One of the most efficacious ways is vacuum precooling.
