基于二维相关荧光光谱鉴别葡萄酒中合成色素胭脂红的研究 被引量:3

摘要 为实现葡萄酒中违法添加外源人工合成色素的检测,对纯葡萄酒和掺入胭脂红色素葡萄酒的荧光谱图进行研究。由于光谱谱图重叠覆盖的影响,在掺入胭脂红色素葡萄酒的荧光光谱图上,无法直接依据色素特征荧光峰进行外源人工合成色素的识别。以浓度为外扰,配制浓度范围为0.1μg/m L^10μg/m L的系列掺入胭脂红的葡萄酒样品,采用二维相关光谱技术对对应浓度测得的荧光光谱进行研究,结果表明:采用以浓度为外扰的二维相关荧光光谱方法能够有效分离掺入胭脂红色素的特征峰,实现葡萄酒中外源胭脂红合成色素的识别。 In order to detect the illegal exogenous synthetic pigment in red wine,fluorescence spectrums of pure red wine and red wine added Ponceau 4R were analyzed. But the synthetic pigment can not be directly identified based on its characteristic fluorescence peaks from the fluorescence spectrum of red wine added Ponceau 4R. Red wine samples added Ponceau 4R with different concentrations ranging from 0. 1μg/m L - 10μg/m L were tested,the two-dimensional( 2D) correlation fluorescence spectrum was studied under the perturbation of synthetic pigment concentration. The results indicate that the fluorescence peaks of Ponceau 4R was separated effectively from fluorescence spectrum of wine added Ponceau 4R,which was used to distinguish the exogenous synthetic pigment in red wine.
