不同八角原料的比较及其油树脂香气成分的对比分析

摘要 分别以不同采收季节和加工方式获得的八角为原料,比较其外观及理化指标,并经超临界CO_2提取,对提取的油树脂进行GC-MS分析。通过比较发现,水烫杀青和覆膜干燥获得的大红八角外观、理化指标及油树脂品质的差异较小,其他类别间皆存在明显差异。结合油树脂的品质可以得出,大红八角是超临界CO_2提取油树脂的最理想的原料,覆膜干燥和水烫杀青均可作为干燥方式。而作为更节约时间和场地的加工方式,覆膜干燥完全可以替代传统水烫杀青。 Star anise harvested in different season and with different processing methods and their oleoresins obtained by supercritical fluid CO_2 were studied. The results showed the differences of appearance quality, physicochemical index and quality of oleoresin between anise treated with water- burnt and film- mulched processes were very slight, while that of treated with other processes were significant. By contrast, Da- hong star anise with water- burning or film- mulching processes was the most ideal raw material for preparing oleoresin by SFE- CO_2. And film- mulching process could replace traditional water- burning method as its shorter processing time and less handling area required.
