摘要 该文从适宜在酒糟中栽培的食用菌品种、酒糟栽培食用菌效果、酒糟预处理技术及栽培料配方等方面对不同酒糟栽培食用菌的现状进行了综述,并对酒糟生产食用菌发展方向进行了展望。酒糟栽培食用菌的研究重心应从传统的可行性研究、配方筛选,转向研究酒糟适宜食用菌生长的作用机理、菌株筛选、食用菌的营养品质、食品安全、酒糟菌糠的再利用,以及工厂化生产的栽培工艺研究等。酒糟栽培食用菌为酿酒业发展循环经济提供了一个前景广阔的发展方向,提升了酒企新形势下的竞争力,同时也为食用菌产业的发展增添了新的动力。 The article summarized the status of edible fungi cultivated by different distillers' grains from the aspects of edible fungi varieties, cultiva- tion effects, pretreatment techniques of distillers' grains and formulas of cultivation materials. Some advices for the development direction of edible fungi cultivated by distillers' grains were also prospected. It was pointed out that the research focus on edible fungi cultivated by distillers' grains should be turned from the feasibility study, formula study into the study of the mechanism suitable for edible fungi growth, strains screening, nutri- tional quality of edible fungi, food safety, reuse of waste material, and the industrial production technology, etc. Production of edible fungi cultivated by distillers' grains provided a broad prospects for the development of circular economy of brewing industry, and promoted competitiveness of the distillery enterprise under the new situation, but also added new impetus for the development of edible fungi industry.
