摘要
为弥补常见的表达亚硝酸盐清除能力的参数的不足以及深入研究清除反应的动力学过程,建立了茶多酚和维生素C清除亚硝酸盐的简化反应模型并推导出参数1/C_0t_(0.5),其中C_0为抗氧化剂浓度,t_(0.5)为亚硝酸盐被半数清除所需时间,并设计实验对其进行验证。实验证实了在亚硝酸盐浓度变化时底物与清除剂不存在固定的物质的量的对应关系;而对于同一种抗氧化剂,底物浓度变化时参数1/C_0t_(0.5)的值不存在显著性差异;同时通过清除反应的动力学过程提出了"最大效率时间"的观点,即在该段时间内绝大多数亚硝酸盐被清除。参数1/C_0t_(0.5)同时将底物浓度和反应速率考虑在内,弥补了传统参数的不足;"最大效率时间"的观点对于提高亚硝酸盐清除剂的使用效率有一定指导作用。
To making up the shortage of commonly-used parameter for scavenging effect to nitrite, a simplified mathematical model of nitrite scavenging reaction with tea polyphenols and vitamin C was established and the parameter 1/C0t0.5 on nitrite under certain conditions was derived,where Co was concentration of the antioxidants and t0.5 was the time taken to eliminate half amount of nltrite.It's proved that there isn't a eerten and constant magnitude relation among nitrite and scavenger when nitrite changes its concentration. However, significant difference of the value of 1/C0t0.5 was not found during the change. Meanwhile,a viewpoint, time of maximum efficiency, which means the majority of nitrite will be eliminated in a short time during the clear reaction,was put forward.The parameter 1/C0t0.5,which takes the concentration of reactant and the reaction rate into consideration, make up for the deficiency of commonly- used parameter, and the viewpoint, time of maximum efficiency might make contribute to the practical application.
