摘要
以银杏叶、蜜环菌提取液为主要原料,用单因素试验、正交试验法对银杏蜜环保健饮料的生产配方进行了优化,并测定了饮料的成分。结果表明,适宜配方为12%银杏叶提取液、15%蜜环菌提取液、12%白砂糖、0.20%柠檬酸和0.15%CMC-Na。依此配方制备的饮料总糖、可溶性固形物、总酸、蛋白质、黄酮和蜜环菌多糖含量分别为122.13 g/L,12.09%,2.05 g/L,0.12 g/100 g,6.10 mg/L和0.27 mg/L,pH为3.6~4.0;颜色为棕黄色、味美可口、状态稳定。
The ingredients of the beverage were improved and tested in single factor experiments and orthogonal experiment using Ginkgo biloba leaves and Armillaria mellea as the main materials. It showed that the optimum ingredients of the beverage, whose pH was 3.6~4.0 were 12% extract of Ginkgo biloba leaves, 15% extract of Armillaria mellea, 12% white sugar, 0.20% citric acids and 0.15% CMC-Na. In the tan, delicious and stable beverage based on the ingredients mentioned before, the contents of total sugars, soluble solids, total acids, proteins, flavonoids and the polysaccharides from Armillaria mellea were 122.13 g·L^(-1), 12.09%, 2.05 g·L^(-1), 0.12 g·(100 g)-1, 6.10 mg·L^(-1) and 0.27 mg·L^(-1), respectively.
