响应面法优化双孢菇干无硫护色剂工艺

Formula Optimization of Non-sulfur Color-protective Agents for Agaricus bisporus by Response Surface Methodology

摘要 以双孢菇为主要原料,对其无硫护色剂的组成进行了探讨。选取护色剂抗坏血酸、柠檬酸、L-半胱氨酸和柠檬酸亚锡二钠为影响因子,以双孢菇干色泽L*值为响应值。在单因素试验的基础上,采用Box-Behnken试验设计构建二次多项式回归方程的模型,进行响应面分析。结果表明:护色剂复合作用对双孢菇色泽的影响程度依次为:抗坏血酸>L-半胱酸>柠檬酸亚锡二钠>柠檬酸,复合护色剂的最优配方(质量分数)为:0.18%抗坏血酸、0.15%L-半胱氨酸、0.79%柠檬酸、0.03%柠檬酸亚锡二钠。加工的双孢菇干色泽L*值为79.83,护色效果好。 To study the color-protecting techniques of dried Agaricus bisporus, the influence of the type of color fixative was confirmed. Four components including vitamin C, citric acid, Disodium stannous citrate (DSC) and L-cysteine were used as influencing factors and the color L* value of dried Agadcns bispoms was used as response value. Based on one-factor-at-a- time experiments, Box-Behnken design (BBD) was applied to establish the corresponding mathematical model. The results showed that the protective effects of these four components on Agaricus bisporus color followed the decreasing order: vitamin C〉L-cysteine〉DSC〉citric acid. The optimal formula (by mass) was as followings: 0.18% vitamin C, 0.15% L-cysteine, 0.79% citric acid and 0.03% DSC. Under the optimal conditions, the L* value of dried Agaricus b/sporus was 79.83 indicating a good color-protecting effect.
