摘要
AMPK是高度保守的丝氨酸/苏氨酸蛋白激酶,可以调节细胞及整个机体的能量平衡。在机体的糖代谢,脂肪代谢以及蛋白质合成中发挥重要作用。通过对糖脂代谢的调控,对改善肉品品质具有重要的意义。对AMPK的研究背景、结构、活性调节,对糖脂代谢的影响以及对肉品品质的影响做一简要概述,旨在为肉品品质的改善提供新思路。
AMP-activated protein kinase(AMPK) is a highly conserved eukaryotic protein serine/threonine kinase that controls cellular and whole body energy homoeostasis, which play an important role in the glucose metabolism, lipid metabolism and proteins synthesis. AMPK also can improve quality of meat by control the glucose metabolism and lipid metabolism. This review summarizes its research background, structure, activity regulation, and the effect of AMPK on glucose, lipid metabolism and quality of meat, which provides a new idea to improve the quality of meat.
