食用棕榈油中三酰甘油氧化聚合物的检测及应用

Detection and Application of Oxidized Triacylglycerol Polymers (TGP) in Palm Oil for Use as Raw Material of Instant Noodle

摘要 三酰甘油氧化聚合物(Oxidized triacylglycerol polymers,TGP)是油脂氧化过程中产生的一类极其复杂的深度氧化产物,且经再次常规精炼也不衰减。因此,TGP是一个客观表征油脂氧化程度的内源性指标,可应用于评价油脂品质。相关研究表明,劣质油脂中TGP平均含量为6.10%,标准差为3.44%。试验结果显示,经油炸工艺使用过后的油脂中TGP平均值为2.80%,标准差为0.58%。因此,TGP含量在2.0%以上可看作风险区域。为了保障棕榈油的高品质,基于实际检测数据和相关研究,并兼顾到目前棕榈油主要生产企业的生产水平,建议使用棕榈油作为原料的食品加工企业将棕榈油新油中TGP的品控线暂定为≤1.0%,对于TGP含量大于1.0%的产品或样品需要深入调查其TGP含量高的原因,寻求解决办法,必要时做相应退货处理,以此辅导供应商做出相应改进。同时精进运用TGP做风险筛查的准确性。 Oxidized triacylglycerol polymers(TGP) is a kind of extremely complex advance oxidation products generated in the lipid oxidation process, and will never be reduced despite conventional re-refining. As a result, it can be regarded as an objectively endogenous parameter for characterizing the degree of lipid oxidation, and used in oil quality evaluation. Studies indicate that, average TGP content in poor quality oil is 6.10% with a standard deviation of 3.44%. This research also indicates that average content of abandoned industrial deep-fried oil samples is 2.80% with a standard deviation of 0.58%. Thus, it can be considered as a risky level with TGP content over 2.0%. To ensure a high quality for palm oil, the raw material of instant noodle, it is recommended to set a temporary limit of no more than 1.0% for TGP content, basing on available results and relative research and also considering the level of producing of main manufacturers. It's necessary to investigate the cause for those products with TGP content over 1.0%, search for the solution and if needed, handle return of goods to improve the quality of oil from suppliers. As well, it shall be continually improved on accuracy for TGP, which is used as risk screening tool.
