摘要 蜂胶是蜜蜂采集植物树脂等分泌物与其上颚腺、蜡腺等分泌物混合形成的胶粘性物质,具有高效的抗菌、抗氧化、成膜等多种生物学活性。因此,蜂胶可作为保鲜剂添加到多种食品中。综述了蜂胶在饮料、水果、蔬菜、肉制品、蛋类、水产品等食品保鲜中的应用研究进展,旨在为蜂胶在食品保鲜中更广泛的应用提供参考。 Propolis is a resinous substance that honeybees collected from tree exudates primarily resins and mixed with secretions of mandibular gland and wax gland. It is known for its multifunctional biological properties such as antibacterial property, antioxidant property and film-forming property. Thus, propolis can be regarded as preservative in many kinds of food. In this article, the research progress on the application of propolis in beverages, fruits, vegetables, meat products, eggs, aquatic products and other food preservation was reviewed, aimed to provide a reference for propolis more widely used in food preservation.
