不同年龄笼养斑头雁肌肉的营养成分比较

Analysis of nutrient composition in muscles of different age bar-headed goose

本研究对1龄(1a)和3龄(3a)笼养斑头雁肌肉组织的基本营养成分、氨基酸、脂肪酸、矿质元素含量进行了分析对比。结果表明:1a和3a斑头雁基本营养成分较为接近;在氨基酸组成方面,3a斑头雁的氨基酸总量、8种必需氨基酸总含量和4种鲜味氨基酸总含量较1a斑头雁高;脂肪酸组成的情况,脂肪酸总量、单不饱和脂肪酸总量1a较高;1a斑头雁钾(K)、镁(Mg)、钙(Ca)、铁(Fe)含量均高于3a斑头雁。

In this article, we compared the contents of general nutrient, amino acid, fatty acid and mineral contents in muscles of different age bar--headed goose. The results showed as follows： the contents of general nutrient were similar between 1 annual and 3 annual bar headed goose; The total contents of amino acids, 8 kinds of essential amino acids and 8 kinds of delicious amino acids in 3 annual bar--headed goose were more abundant than 1 annual bar--headed goose; The total contents of fatty acid and monounsaturated fatty acids in 1 annual bar headed goose were higher; The contents of Potassium （K）, magnesium （Mg）, calcium （Ca） and iron （Fe） in 1 annual bar--headed goose were higher, too.
