Application of Proteomics in Milk Protein Research

蛋白质是乳中所有功能组成成分的关键分子。乳蛋白质种类多样,所有的蛋白组分均具有不同的甚至特殊的生物学功能。基于物种或泌乳时期的不同,乳中蛋白组分及含量存在一定的差异。蛋白质组学是后基因组时代主要的研究方向之一,有助于更深层次的研究乳蛋白的组成和动态变化等。

Protein is one of functional components in the milk. Lactoprotein are in great varieties, all proteins have special biological functions. According to the different species or lactation period, there was some difference for protein composition and content in the milk. Proteomics is one of the main research di-rection in the post-genome era, which will help the further research on composition of milk protein and dy-namic changes.
