考古所见汉晋北朝图像及相关器具和实物等显示,公元前后至公元6世纪左右,烤肉串曾在中国黄河流域及其周边广大地区流行。人世间的美食至尊和皇家的好尚,应是其盛行的主要动因。其后千余年来古典烤肉串的稀见和新疆风味烤羊肉串的流行,则印证了中华美食代有亮点与创新的史实。探究今日遍布数十个国家和地区的烤肉串之源,尚待多国学者团队的烤肉串文化考古之旅。
