摘要
近些年来,多不饱和脂肪酸(PUFAs)逐渐成为研究热点之一。本文在查阅大量相关文献的基础上,对PUFAs的类型与结构、来源、制备方法、生理作用及应用现状进行了综述,为多不饱和脂肪酸科研与开发提供参考。
In recent years,polyunsaturated fatty acids（PUFAs） have become one of the research hotspots for scholars.Based on the large amount of references,in this paper the research progress of PUFAs＇ in types and structures,sources,preparation methods,physiological functions and current applications were reviewed,to provide references for research and development.
