军队院校社会化保障食堂食品安全危害因素分析与关键控制点方案制订 被引量:3

摘要 目的掌握某部军队院校社会化保障食堂的食品安全状况,系统分析军队院校社会化保障食堂在硬件、软件存在的主要危害因素及影响程度,找准关键控制点并研究制定切实可行的控制方案,以期为军队院校食堂确保食品安全提供可靠保证。方法运用HACCP原理及工作程序,依据国家或军队的相关卫生标准,通过查看资料、现场检查、样品检测、抽查提问等方式,全面了解和掌握军队院校社会化保障食堂存在的主要食品卫生与安全问题,并结合多年饮食场所卫生监督监测工作经验积累,详细进行危害分析、找准关键控制点、确定关键控制点的关键限值、建立监控程序与纠偏措施等,制订关键点控制方案,并进行实践验证。结果军队院校社会化保障食堂食品安全主要危害因素复杂,涉及认证管理、健康体检、场所建设、加工、有害生物控制、专间管理、水质检测、食品留验等13个方面。其中单位资质、人员因素、硬件条件、原料质量、食品加工、有害生物防制、专间管理、温度控制、餐炊具洗消管理、微生物控制、食品留验、垃圾处理12项被列为关键控制点。结论食堂的食品安全是十分复杂的,影响因素也是繁多的,特别是带有地域特色的饮食,很难用一个标准或几个程序去控制,必须密切结合食堂的具体情况去研究制定HACCP质量控制体系,才能确保有的放矢、收到实效。 Objective By mastering the food safety status of a military college social security canteen, to systematicly analyze the main factors and the influence of the hardware and software in the socialized canteen of Military Academies,to identify the key control points and research and develop feasible control scheme,and to guarantee the safety of food safety in the canteen of military academy. Methods HACCP principle and working procedure were used.Based on the relevant national or military health standards, by viewing data, on-site inspection,sample testing, sampling and other ways to ask questions, to fully understand and master the main food hygiene and safety problems in the socialized canteen of military academies.And combined with years of experience in the field of food hygiene supervision and monitoring, hazard analysis in detail was carried on, critical control points were identified, the critical limits of critical control points were determined, monitoring procedures and corrective measures were established, key point control scheme was formulated, and practice verification was carried on. Results The main hazards of food safety in the socialization of Military Academies was complex. It involved certification management, health examination, site construction, processing, pest control, management, water quality testing, food inspection and other 13 aspects. Conclusion Canteen food safety is very complex.lts influencing factors were myri, especially with regional characteristics of the diet. It is difficult to control with a standard or a few programs.It must be closely combined with the specific situation to the canteen to research and development of HACCP quality control system, to ensure the targeted, effective.
