摘要
随着工业信息化、智能化水平的不断提升,智能化生产技术目前广泛运用于各行业生产之中。浓香型白酒作为传统轻工行业,针对其发酵过程中不能实时监控的缺陷,采用基于物联网技术的智能化窖池管控系统,连续多位点、多排次跟踪测量酒醅发酵温度,并绘制温度变化曲线、拟合构建发酵模型、指导一线酿酒生产。结果表明,智能化管控系统与酿酒生产契合度较好;由管控系统统计所得发酵温度数据变化与传统经验基本相符;使用MATLAB软件构建发酵温度数据的高斯八阶函数模型,其拟合效果较好;科学运用该系统后,试验车间的原酒产质量较试验前有明显提升。
With the continuous improvement of the industrial information and intelligence technology, intelligent manufacturing is widely used in the production of various industries. Luzhou flavor liquor as the traditional light industry, aiming at the limitation of the fermentation process can not be real-time monitoring, using intelligent pit control system based on lOT technology, continuous muhisite tracking measurement of fermented grains temperature, and drawing temperature curve , fitting construction model, guiding Luzhou flavor liquor fermentation. The results show that, the intelligent control system is suitable for the production of wine ; the statistical data of fermentation temperalure is in line with the traditional experience; eight order Gauss function model of fermentation temperature data using the MATLAB software, which has good fitting effect; the scientific use of the system, the quality of the original liquor shop test has improved significantly compared to those before.
