摘要 目的:对影响地龙提取液中蛋白质稳定性的因素进行研究。方法:通过考马斯亮蓝法建立了地龙提取液中蛋白质的含量测定方法,并考察了温度、pH值、无机盐及有机溶剂等因素对提取液中蛋白质稳定性的影响。结果:在30℃、pH值为7的条件下,提取液中蛋白质的含量最高,而加入无机盐或有机溶剂后蛋白质含量均有所降低。结论:提取液的最佳保存条件为30℃、pH值7,且提取过程中应尽量减少无机盐和有机溶剂的使用。 Objective: Factors influencing the stability of the protein in earthworm extract were researched in this article. Methods: Braford was adopted for determination of protein to observe the influences which temperature,pH,inorganic salt and organic solvents had on the stability of protein. Results: It showed that the protein was the stablest under 30℃ and pH = 7 and became weaker when inorganic salt and organic solvents were added.Conclusion: The optimal preservation condition for earthworm extract is 30℃ and pH = 7,and inorganic salt and organic solvents should be limited in the extraction process.
