鄂通两头乌猪肉切块初报

摘要 文章对85 kg级的鄂通两头乌猪作了胴体和切块测定。发现其胴体品相和切块品相尤其是大排眼肌切块、前肩切块的一致性相当好。就总体而言,鄂通两头乌猪肉切块的品相介于大白猪和通城猪之间而略偏向于通城猪。此外,测定结果提示85 kg级的鄂通两头乌猪略显幼稚,尚不足以体现出最佳的成熟切块品相。建议后续跟进大体重级别测定。 The carcass and meat cut of 85 kg etongliangtouwu pig were evaluated. The results are as follow: the uniform ability of the carcass and meat cut, especially T bone cut and picnic cut are reasonable. Generally speaking, the quality charac.tcristics of Etongliangtouwu pig are somewhere between that of Large white pig and that of Tongcheng pig while a litter bit closer to that of Tongcheng pig. In addition, 85 kg Etongliangtouwu pig is too young to show the best matured meat cut quality. So, bigger weight Etongliangtouwu pig is suggested to be evaluated later as a follow of step.
