摘要 目的通过对本地居民日常膳食中各类食品的食盐含量测定结果进行分析讨论,对食品中食用盐含量进行分级,为了使民众更直观地了解和判定食品中的食盐含量,以为选择食用食盐及含盐食物提供科学参考,指导健康教育与慢性病防治工作。方法对来自十堰市的居民家庭菜肴410份、餐饮业菜肴384份、其他含盐食品104份共898份食品的食盐含量结果进行测定与分析,根据食盐含量高低,将食品中的食盐含量进行分级。结果将食品中的食盐含量分为10个级别,从一级到十级,食盐含量依次增加。结论通过对食品中食盐含量进行分级,可以帮助民众了解和判定食品中食盐含量,为降低食盐摄入量的干预工作提供更便于操作的方法。 Objective Through the analysis of the results of the salt content grading for various kinds of food to grade the salt content,provide references for directly understanding the salt content,and provide guidance for health education and chronic diseases control. Methods The salt content of 898 dishes / foods were determined and analyzed,including: household dishes from Shiyan City,410,restaurant dishes,384,and other salty foods,104. According to the degree of salt content,salt content in dishes / foods were graded. Results The salt content of dishes / foods was divided into 10 grades,grade 1 was the lowest,grade 10,the highest.Conclusion The salt content grading method was helpful for people to understand and determine the salt content,and also beneficial to provide a convenient way to decrease the quantity of salt intake.
