摘要 食用植物油是人们日常饮食中不可或缺的部分,它不仅为人体提供每日必需的能量,还提供必需脂肪酸、维生素等营养成分,因此其品质与安全性关系到人们的健康。然而当前我国食用植物油质量安全问题频发,其中最主要的问题就是食用植物油的掺伪。从食用植物油中的成分出发,重点分析了其中的脂肪酸、甘油三酯、植物甾醇、维生素E、挥发性物质等成分在食用植物油掺伪检测技术中的最新研究进展,并分析目前所存在的问题,为今后食用植物油的掺伪检测提供一定的方法。 Edible vegetable oil is an essential part of people' s daily diet, and it not only provides the necessary energy for human body, but also provides essential fatty acids, vitamins and other nutrients. The quality and safety of edible vegetable oil concerns to everybody's health. However, the quality and safety problems of current edible vegetable oil in China occur frequently, and the most important problem is the edible vegetable oil adulteration. Based on compositions of edible vegetable oil, the latest research progress in detection techniques of the compositions of edible vegetable oil such as fatty acids, triglycerides, phytosterols, vitamin E and volatile compounds, etc were reviewed, and the present problems were analyzed, so as to provide methods for edible vegetable oil adulteration detection in the future.
