摘要
物料衡算是一切生产工艺设计的重要基础,也是新厂房改建扩建项目产能计算、厂房设计、厂房改造、车间布局、设备配置、工艺改进必不可少的重要环节。以2000吨固态发酵酿造食醋工艺流程作为依据,按照工艺操作过程和生物化学反应顺序进行了物料衡算,在严格实施工艺操作规程的情况下,每1kg大米出品总酸(以醋酸计)为4.2g/dL的食醋7.45kg,原料淀粉利用率为31.9%。
As the foundation of production technology design,material balance plays a key role in productivity calculation,plant design,factory reconstruction,workshop layout,equipment configuration,and technology improvement in the renovation and extension project of new plants.The material balance of two thousand tons' solid-state fermented vinegar has been calculated based on the process of technology operation and the sequence of biochemical reaction.Under strict control of technology operation,the total production of vinegar(per kilogram of rice)is 7.45kg(4.2g/dL total acids)and the starch utilization ratio of raw materials is 31.9%.
