摘要
对菏泽地区4个山药栽培品种进行了干物质、碳水化合物含量及多酚氧化酶活性比较。试验结果表明,4个山药品种的品质存在一定的差异,其中鸡皮糙山药和西施山药的干物质、可溶性糖、淀粉、纤维素、可溶性蛋白含量都明显高于白玉山药和九斤黄山药,具有较高的营养品质;在多酚氧化酶活性方面,九斤黄山药最高,鸡皮糙山药和西施山药其次。
The dry matter and carbohydrate contents and the polyphenol oxidase activity of the 4 different Dioscorea batatas in Heze area were analyzed. The results showed that there were some differences in quality of four cultivars. The contents of dry matter, soluble sugar, starch, cellulose and soluble protein of Jipicao yam and Xishi yam were obviously higher than those of Baiyu yam and Jiujinhuang yam. So they had higher nutritional quality. The polyphenol oxidase activity of Jiujinhuang yam was the highest, the second was Jipicao yam, and the worst was Xishi yam.
