玉米油氮气脱臭过程中保留两态植物甾醇的工艺研究 被引量:1

摘要 探究氮气脱臭过程中,不同工艺条件对玉米脱色油中游离态和酯态植物甾醇(以下简称为两态)以及两态总甾醇含量变化的影响。在单因素试验的基础上,通过正交试验确定了最佳工艺条件。试验表明:温度对两态总甾醇保留率影响显著,时间和氮气通气速率对其影响不显著;温度、时间对游离态甾醇损失率影响显著,氮气通气速率对其影响不显著。影响因素的主次顺序为温度>时间>氮气通气速率。综合选取最优脱臭工艺条件:温度210℃,时间80 min,氮气通气速率0.08 m^3/h。对两态总甾醇保留率进行回归分析,得到回归方程为Y(%)=-0.28A-0.07B-22.71C+165.35。最佳工艺条件下两态总甾醇保留率为96.78%、游离态甾醇损失率为13.16%。 We explored the effects of different deodorization conditions on the content of free and esterified sterols (two-state sterols for short) as well as the total content of the two-state sterols in the bleached tom oil. On the basis of single factor experiments, the optimal deodorization conditions were detemrined by orthogonal experiment. The results showed that: temperature had significant effect on the retention rate of the two-state sterols, however time and nitrogen flow rate had non-significant effect; tempeature and time had significant effect on the loss rate of free sterols, but the nitrogen flow rate had non-signifanct effect. Test results showed that the primary influencing factor was temperature, followed by time and nitrogen flow rate, and the optimal deodorizaiton conditions were determined as follows: temperature 210 ℃, time 80 min, and nitrogen flow rate 0.08 m3/h. The regression equation of the retention rate of the two-state sterols was Y ( % )=-0.28A -0.07B-22.71 C+ 165.35. Under the optimal conditions, the percentage retention rate of the two-state sterols was 96.78%, and the loss rate of free sterols was 13.16%.
