锐孔法制备表儿茶素微胶囊工艺优化 被引量:1

摘要 以表儿茶素单体为原料,采用Box-Behnken响应面优化实验设计,以包埋率为指标,研究了锐孔法制作表儿茶素微胶囊工艺参数。结果表明,表儿茶素微胶囊的最佳工艺为:壁芯比4:1、针头孔径0.5mm、海藻酸钠浓度1.6%、CaCl_2浓度2.35%,在此工艺条件下表儿茶素微胶囊的平均包埋率为86.2%。该实验结果为后继功能性食品中表儿茶素活性保护提供了实验依据。 The epicatechin was selected as materials, Box-Behnken response surface was used to design and optimize the experiment as well as the encapsulation efficiency was used as the main evaluating index, the processing technology parameters of making epieatechin mierocapsules by piercing method were studied in this paper. The results showed that the optimum processing of epicatechin microcapsule were as follow: wall-core ratio 4:1, needle diameter 0.5mm, sodium alginate 1.6%, CaC1= 2.35%. Under these conditions,the average embedding rate of epicatechin microcapsules was 86.2%. Moreover, it was provided experimental evidences for protecting epieatechin activity of functional foods.
